Using a microwave oven to boil water can be hazardous. With perfectly even heating the entire contents can flash to steam at once even after you remove it from the oven. Read this, something like it happened to me several years ago.

During my travels in 1999 I visited my good friends Randy and Dolly. Dolly baked a Bailey's Irish Cream Cheesecake for me. It was so good I went back to get the recipe. They gave me a copy of the article and Dolly added some well-appreciated "lessons learned".

I baked my first one for Christmas. It seemed to go over well, even with the I-don't-really-like-cheesecake-but-I'll-try-some-to-be-polite crowd. When I went to make a couple more for some New Year's Eve parties I discovered that I had made a significant mistake. The Christmas version had only 1/2 pound of cream cheese instead of 1 1/2 pounds plus I used 12 ounces of chocolate chips instead of eight. Make it any way you want....

The "lessons learned" from Dolly includes:
A) Even using less butter than the recipe calls for it will likely drip out of the pan and make a mess in the oven. Either wrap the bottom of the pan with aluminum foil or make sure there is some on the bottom of the oven to catch the drips.
B) Be careful about the cooking time. Both Dolly and I need to cook it about 15 minutes longer than the recipe calls for.
C) Let the cheesecake set in the refrigerator over night if at all possible to let the flavor develop.

Some friends asked me to do some repairs on an old wooden rocking horse while they are out of the country. The repairs necessitated removing the head and reattaching it. While it was off I had a rather mischievous thought. When they return home they will have an e-mail waiting for them with "an offer they can't refuse".
